Pulses are the dried seeds of pod-bearing plants of the Legumiosae family. They are rich in protein, iron, calcium and B vitamins. They are high in fibre, but contain virtually no fat, making them the nutritionists' dream food.
Blue peas grow well in the Canterbury Plains and are suitable for milling into flour, sprouting and cooking whole. When milled they produce a deep green flour which is attractive to soups and baked goods.
